Dry aging concentrates flavour by letting the beef rest, uncovered, in a carefully controlled chamber. Ours is lined with blocks of Himalayan pink salt, which draw out moisture, keep the air clean and give the beef a rounder, sweeter, more intense taste.
We start with quality Donegal beef, selected by the butcher, not the supermarket.

McCarron's Butchers was established in Raphoe in 1984 and has stood on The Diamond, in the very centre of town, ever since. Four decades on it is still family run, still hand-cutting at the counter and still supplying both local households and wholesale kitchens.
